Espresso Brownies

Ingredients
250g Butter
500g Caster Sugar
100g Dark Chocolate
50g Cocoa Powder
4 Eggs (Beaten)
100g Self Raising Flour
2 tbsp Strong Espresso Coffee
2 tbsp Coffee Beans (Lightly Crushed)
Directions
- Preheat Oven to 180 degrees / Gas Mark 4
- Place Butter, Sugar, Chocolate and Cocoa together in saucepan. Set over gentle heat and stir until the butter has melted
- Leave the mixture to cool a little
- Beat the eggs into the mixture, then stir in the flour and espresso
- Pour into the preheated tin and scatter the crushed coffee beans over the top
- Bake for 25 mins or until the brownies are just set. Be careful not to overcook them - the texture should be fudgy
- Leave to cool in the tin and then cut into squares or bars. Store in an airtight container
